The extended editions are where it's at - those extra scenes actually fix some confusing moments from the theatrical cuts. Though fair warning: the CGI shows its age more in 4K. Some shots of Gollum look a bit video-gamey now, but you'll forget all about it when Helm's Deep starts.
Sound-wise, prepare your neighbors for war! The Dolby Atmos mix makes battles feel like they're happening IN your living room. That Balrog roar shook my walls (and probably my downstairs neighbor's ceiling). Dialogue stays crisp even during chaotic scenes - looking at you, Christopher Nolan!
